Day 1: the Geibikei boat ride

Day 2: Gembikei or Hiraizumi

Day 3 and beyond
Day three suits picking up the sight you skipped, or heading to Sendai or Morioka by shinkansen. With more time than that, move to the Sanriku coast rather than repeating gorges, because the mood is different and it is a separate trip to plan.

The fast version leaves Ichinoseki early, takes one of the first boats, and catches an afternoon train to add Gembikei or Hiraizumi the same day. It suits fit travellers using one hotel for the whole trip, but it is risky if anything runs late. Budget and transport costs
