The classic slip is a layover in a third country: switch the line on there, the phone registers, and the clock starts before you even arrive.

Switch the eSIM line on at 09:00, once you are on the ground and out of airplane mode. The clock starts there, not at purchase.
Installing early is the right call: installation needs internet, and airport Wi-Fi sometimes wants a local number to sign in.
The safest order
- Install the profile at home on Wi-Fi, but leave the line off
- During a layover, stay in airplane mode or keep the eSIM line off
- At the destination, switch the eSIM line on and set it as the data line
- Keep roaming data off on the home SIM throughout to avoid surprise charges
