Does incognito mode save data?+

The opposite, slightly. Incognito does not keep a cache between sessions, so every revisit re-downloads the images and fonts. It exists for privacy, not for saving data.

Why does email use data even when I am not reading it?+

Because the app is syncing in the background: new headers, the bodies of messages you have not opened, and sometimes attachments fetched in advance so they are ready. Switching from push to an hourly fetch cuts that noticeably, and you will barely notice the difference.

How much of a 7-day plan should I set aside for browsing and email?+

If I am nearly out of data, what should I do first?+
