Is a screenshot of a boarding pass acceptable?+
As a backup, yes; as your only copy, no. An image cannot update when the gate or the time changes, and individual airports set their own rules about what they accept. Keep the app version and the image together, and refresh the live one whenever you have a connection.
Should documents live in the cloud or on the device?+
On the device first, with the cloud as backup. A cloud file you have not downloaded is just a link. Most cloud apps have an option to keep a folder available offline: turn it on for the trip folder before you leave, then verify in aeroplane mode.
If I have a data plan, do I still need offline copies?+
Yes. A plan solves internet access, not a flat battery, a dead spot inside a terminal, the minutes after landing before the phone attaches, or a problem on the provider's side. Offline copies are what keep any of those from becoming serious.
What is actually worth printing?+
A short set: the outbound boarding pass, the first night's accommodation, and one page listing every booking reference plus the numbers you would need to call. It weighs nothing and it is worth the most in the minute your phone dies.
What if the barcode will not scan?+
Turn the brightness to maximum, switch off battery saver, and wipe the screen. If it still fails, give staff the booking reference: most desks can find you from the reference or the passport without scanning anything.
How long should I keep saved documents?+
Only as long as they are useful: through the trip, and afterwards for as long as an expense claim or insurance record needs them. Then delete them, because they contain more personal information than most people realise.
